Golden Spring Salad

Makes: 1 side salad (serving size as seen)

Golden - for the berries and days of the warm weather season!

INGREDIENTS

  • 1/2 tbsp fresh lemon juice

  • 1/2 tbsp honey

  • 5 - 6 cape gooseberries, aka, golden berries

  • 1 small shallot

  • 2 - 3 tsp preserved capers (err on the higher side if you like a more briny taste to your salad)

  • 3 - 4 thin slices of jalapeno, each slivered into half

  • 2 cups mixed spring greens

  • 2 tbsp olive oil & herb marinated olives

  • 2 tbsp olive oil & herb marinated feta chunks

  • 5 - 6 mint leaves

  • Pinch of flaky sea salt or fleur de sel, to finish

method

  • Mix the lemon juice and honey in a medium bowl, to form a runny dressing.

  • Thinly slice the gooseberries and the shallot and add them, along with the capers and jalapeno slivers, to the honey-lemon dressing. Toss well with your fingers to ensure everything is coated with the dressing and let it marinate for 5 minutes.

  • Add the spring greens to a salad plate or bowl of choice. Sprinkle the gooseberry/shallot/caper mixture all over, but do not pour in the juice that remains behind. Add the olives and crumble the feta slightly by hand before scattering all over. Pour the infused dressing from earlier all over the salad, and give it a good toss to coat everything well. Sprinkle the mint leaves and some flakey sea salt all over and dig into that crunchy freshness!
